This simple recipe makes enough ribs to serve four, so it’s a great way to treat the family to something different this week – it will soon become of your favourite recipes everyone will love.
Ingredients:
2 x 400g rack of pork loin ribs
1tsp smoked sea salt
1tbsp Chinese five spice
1 onion, chopped
2 garlic cloves, crushed
600ml chicken stock
2 spring onions, chopped, to serve
For the sauce:
1tbsp sunflower oil
2 onions, chopped
1tsp Chinese Five Spice
4tbsp hoisin sauce
4tbsp tomato ketchup
100ml apple juice
- To make this pork recipe, heat the oven to 180°C or Gas Mark 4. Put the rib racks in a large roasting tin. Sprinkle over the salt, Chinese Five Spice, onion and garlic.
- Pour over the chicken stock, cover with foil and cook for 1 hour, until the ribs are really tender.
- For the sauce, heat the oil and fry the onions gently for 5 mins, until softened. Add the Chinese Five Spice, hoisin sauce, ketchup and apple juice, and stir to combine.
- Pour off most of the stock from the ribs and pour the sauce over the ribs, turning to coat well. Return them to the oven to cook for 20 mins.
- Cut each rack into 2 and sprinkle over the spring onions to serve.
